Crispy potatoes, topped with melting cheese and of crisp bacon are a great side dish or if you are like me a cheeky main dish! These really are the best Cheesy Bacon Potatoes! I’ve served them with eggs for breakfast and with a steak for dinner. Even add a dollop of sour cream and shallots to jazz them up for a BBQ with friends.
INGREDENTS》
5 large potatoes, peeled & diced
5 bacon rashes, sliced
1 onion, diced
3 cloves garlic, minced
2 tbs olive oil
2 tbs butter
Pinch of mixed herbs
Salt & pepper
1 cup melting cheese, grated 
Avocado, sliced
Fresh rocket 
INSTUCTIONS》
Peel and diced potatoes, keeping a uniform size for even cooking. Line a tray with baking paper and set aside.
Heat olive oil and half the butter in a large pan or skillet over medium heat.
Add bacon, potatoes, onion garlic, pinch of mixed, toss well to coat everything well in the butter and oil.
Keep stirring regularly to avoid the potatoes sticking (reduce heat if needed), once the potatoes have started to soften about 7-10 minutes (may take longer depending on size of potatoes) add the rest of the butter and turn up to medium- high to help the potatoes get a crisp golden-brown outside.
Get the prepared baking tray and spread an even layer of the potatoes and bacon mix (keeping then close together) sprinkle with the grated cheese and grill on low-medium till the cheese is melted and golden. Remove from grill.
Serve on a bed of rocket leaves and top with fresh avocado, salt and pepper. Enjoy!!!
