Hassel Back Sweet Potatoes

Unbelievably versatile, Hassel back sweet potatoes can be served with absolutely anything —sided with a simple lemon marinade on this grilled chicken is just so easy, bright, and flavourful!
INGREDIENTS>
LEMON HERB MARINADE
1/4 cup olive oil
Zest of 1 lemon & lime
Juice of 1 lemon & lime
1 tbsp basil, dried
1 tbsp parsley, dried
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp chilli flakes
1kg chicken thighs
GARLIC BUTTER SWEETPATATOS
10 small, sweet potatoes, hassle back sliced
4 cloves garlic, minced
4 tbs butter
4tbs olive oil
Half a lemon, juiced
1 tps thyme, dried or fresh
salt and pepper
Extra herbs to garnish
INSTRUCTIONS>
Place your chicken in a bowl with all ingredients for the Lemon Herb Marinade. Cover let the chicken marinate for a minimum of 1-12 hours.
Place chicken on a hot BBQ grill over medium heat, turn during to cook thoroughly(5-7min each side). Remove and let rest for 5min.
Preheat oven to 180°, line a tray with baking paper. Place garlic, butter, olive oil, lemon juice, thyme and salt/pepper in a small bowl, mix together well.
Place sliced sweet potatoes on tray, clover with half the garlic butter mix. Cover with foil bake for 25min, till centre is tender. Remove from oven and discard foil, cover the sweet potatoes with the remaining butter(making sure to get between the slices) bake for 20-30min till roasted. Serve with lemon herb bbq chicken and sides of your choice.
