Angela Nason’s Mince & Vegetable Stir-Fry – A Tablelands to Tabletop Recipe
This Mince & Vegetable Dish is a simple, hearty, and nutritious meal that’s perfect for busy families! Packed with fresh Tablelands produce, it’s easy to make and full of flavor.
Ingredients:
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 2kg mince (beef, pork, or chicken)
- 300g broccoli, chopped
- 300g cauliflower, chopped
- 300g zucchini, diced
- 100g capsicum, diced
- 2 tablespoons soy sauce
Method:
1️⃣ Sauté the aromatics – Heat a large pan or wok with a little oil. Fry the garlic and onion until soft and fragrant.
2️⃣ Cook the mince – Add the mince and cook thoroughly, breaking it apart as it browns.
3️⃣ Add the vegetables – Stir in the chopped broccoli, cauliflower, zucchini, and capsicum.
4️⃣ Season & simmer – Add the soy sauce, stir well, then cover with a lid. Cook on medium heat for 30 minutes, stirring every 10 minutes.
🌿 Serving Suggestion: Serve with rice, noodles, or enjoy on its own for a low-carb option!
