Angela Nason’s Satay Chicken – A Tablelands to Tabletop Recipe
This Satay Chicken is a quick and delicious meal using fresh, local produce from the Tablelands! Creamy, nutty, and packed with flavor, it’s perfect for a cozy dinner or meal prep.
Ingredients:
- 800g chicken (thighs or breast)
- 2 tablespoons peanut butter
- ¼ onion, finely chopped
- 2 garlic cloves, minced
- ½ capsicum, diced
- 50g broccoli stem, chopped
- ½ can coconut milk
Method:
1️⃣ Sauté the aromatics – Heat a pan with a little oil. Add the chopped onion and garlic, frying until soft and fragrant.
2️⃣ Cook the chicken – Slice the chicken into strips and add it to the pan. Cook until golden and fully cooked through.
3️⃣ Add the veggies – Toss in the diced capsicum and chopped broccoli stems. Let it cook for 15 minutes, stirring occasionally.
4️⃣ Make it creamy – Stir the peanut butter into the coconut milk, then pour it into the pan. Mix well and let it simmer for another 15 minutes to thicken and develop the flavors.
