Sweet Potato Gratin

This melt-in-your-mouth Sweet Potato Gratin will amaze your taste buds. – soft as butter, velvety, rich, herbal with a hint of zesty lemon. Absolutely luxurious.

INGREDIENTS》
500g sweet potato, washed and sliced thinly
500g purple sweet potato, washed and sliced thinly
3 garlic cloves, minced
1tbs mixed fresh herbs
4tbs, salted butter
1tbs, olive oil
1 lemon, juiced
Sea salt & freshly ground pepper
INSTRUCTIONS 》
Preheat the oven to 190° and grease a baking dish. Layer sliced sweet potatoes in the baking dish and set aside.
In a small saucepan over low heat add butter, minced garlic, olive oil, herbs and lemon juice. Stir till butter is melted and starting to simmer, remove from heat and pore over the layered sweet potatoes. Season with salt and pepper
Cover the pan with foil and bake in the oven for about 20 minutes, then remove foil. Bake again for 30 minutes more until the sweet potatoes are soft and the surface slightly browned and crisped. For extra crispness, you can finish under the grill for a few minutes, but keep a close eye so it doesn’t burn.
Serve with as a side dish. ENJOY!
